For the beer and cheese, it will be a selection of beers from the brewers paired with Nimbin Valley Cheese and spoken through by Matt Kirkegaard.

Sour and wild beers are the natural wine, or sourdough bread, of the beer world. The beer we will be discussing in this panel is all about letting natural bacteria and wild or unusual yeast flourish during the fermenting process. The results are often unique to the brewer and their brewery, while showing unique flavours and textures impossible with standard yeasts. To help us learn about these esoteric beers, we’ve grabbed three of the best in Ben Kraus from Bridge Road, Will Tatchell from Van Dieman, and Brad Rogers of Stone and Wood/Forest for the Trees.

With modern Australia being a nation of many cultures, is it even possible to make food and drink unique to this land? Of course it is! Stone and Wood was built on its Original Pacific Ale, which features an Australian-developed and grown hop now sought after around the world; while Brookie’s gin highlights native herbs and fruits that you may not even know exist, let alone what they taste like. In this session we’ll explore these flavours and characters, their importance to these businesses, and celebrate the amazingly delicious ingredients available in this vast country.

Lager is probably your favourite brewer’s favourite style and it’s by far the most consumed category of beer in the world. Yet many drinkers turn their nose up at mere mention of the word, thinking it to be boring and for people with unsophisticated palates. So why do brewers love it so much? We’ve roped in Dave Macgill from Moo Brew, plus Brad Rogers and Caolin Vaughn from Stone & Wood to help celebrate the beauty, the simplicity, the precision and the history of the lager styles. Don’t let years of bad beer from the big corporate brewers turn you away from these wonderful beers.
